Sweet Potato Skillet

Our family is all about simple, delicious meals, with ingredients you can pronounce.  I often dream up the idea, and my husband helps me execute the plan.  This meal is just that;  super tasty and guilt-free…with a ton of healthy and filling ingredients.  Another bonus…the meal prep is super easy and all the cooking is done in one pan.  I will always offer to do the dishes when only one pan is used 😉 .  As a parent, I have found that this meal can be kid friendly.  For our girls, we just need to draw attention to the food we know they like (included in the recipe) and before you know it, they are eating it all without “picking” at it.  And you can always add a little cheese at the end…we are from WI after all.

Ingredients:

  • 2 tbsp extra-virgin olive oil
  • 1 lb. lean ground turkey
  • 1-2 garlic cloves, minced
  • ½ cup onions, diced
  • ½ cup red pepper, diced
  • 2 large or 3 medium sweet potatos, diced
  • 1 15 oz. can Whole Kernel Sweet Corn (Del Monte Non-GMO works great!)
  • 1 15 oz. can low-sodium Black beans
  • 1-2 Cups of low-sodium chicken stock
  • Salt and freshly ground black pepper to taste
  • A pinch of red chili flakes
  • ½ cup shredded mozzarella cheese
  • Fresh parsley for garnishing
  • 1 Tbsp Ground Cumin
  • 1 Tbsp Chili Powder
  • 1 tsp Onion Powder

Instructions:

In a large pan on medium heat, add olive oil, onion and peppers and sautee until soft.  Add minced garlic and saute for another minute.  Add ground turkey and break up meat until cooked through.  Add cumin, chili powder, onion powder, chili flakes and salt/pepper.  Mix thoroughly.  Add sweet potato, black beans, corn and 1 cup of chicken stock.  Cover and let simmer until sweet potatoes are soft (about 10-12 minutes).  Stir occationally.  Add in additional chicken stock as needed until desired consistency.  Garnish with whatever you like:  sour cream, cheese, hot sauce and enjoy!!

In addition to being a great meal, it is also a great leftover!  The next morning, we eat it for breakfast by just throwing an egg on top with a little Sriracha sauce…yum!  For any of you meal preppers, it’s also a great take-to-work lunch.  Just pop some in a microwavable dish and you’ll have a drool-worthy meal your co-workers will envy.
